I almost always have boneless/skinless individually frozen chicken breasts in the freezer. I throw them in a pyrex dish with garlic salt and italian seasoning with the oven at 350 while I prepare a salad or veggie and brown rice. If I want to switch it up a little bit, I might put a layer of pepperonii and melt some mozzarella cheese on top. (my husband does a low carb diet so we always have pepperoni in the house for him to snack on) (Oh, I can do this much later than 3:30.)
My go to dinner is eggs/sausage/toast. My kids love breakfast food!
